Pizzeria, Aphrodite’s Rock Microbrewery & Brewpub

What was once a poor man’s meal, considered only good enough for labourers, market traders and street vagabonds, and sold by street vendors in the back alleys of Naples has now taken pride of place on tables throughout the world. Here at Aphrodite’s Rock Microbrewery & Brewpub’s Pizzeria we work, leaving no stone unturned, to bring you the very best and 100% authentic Pizza Napoletana.

Pizza Napoletana is as much about rich tradition and heritage as it is about food with skills passed generation by generation from Italian fathers to sons for over 200 years.

All our pizzas and breads use a traditional sourdough starter (’Biga’) that we brought to Cyprus from Naples. It does not get any more authentic than this. This sourdough contains a mild lactobacillus, a ’friendly’ bacterial culture, and we mix this with flour and live bakers’ yeast. This symbiotic combination of bacteria and yeasts provides the foundation and depth of flavour for all the pizza dough and breads which we make daily. Our sourdough starter can be considered to be a living, growing organism that we lovingly feed everyday with just flour and water. Much like a fine wine or cheese, as it grows older it acquires more and more flavour. It is a process that cannot be rushed and the ’mother’ and resultant ’offspring’ of our special sourdough have been producing some of the finest pizzas in Naples for over one hundred years. All our pizzas and breads begin by adding a generous portion of this starter to a blend of premium Italian Doppio Zero "00" flour, highly refined and talcum powder soft, with strong high gluten flour. We then leave the very high hydration dough to slowly ferment to develop flavour for up to about 48 hours in a cold refrigerator before finally lovingly working this as part of your pizza’s preparation. This step cannot be rushed.

Our pizzaiolo (or pizza chef), has been trained in the ways of the true masters of Napoletana pizza. Using nothing other than his skilled hands (no other working tools eg rolling pins or mechanical pressing machines can be used) he rapidly forms a disk of dough 3mm – 5mm thick which rises to an outer rim about 3cm wide which the tomato sauce, cheese and other toppings can never be allowed to touch as it must stay dry. It is into this outer rim where our pizzaiolo pushes all the precious fermentation–induced bubbles that will rapidly expand in the high heat of the oven resulting in the traditional Bordo Alto Napoletana, otherwise known as the Cornicione or "crown" of the crust, which must be puffy and light, crispy and chewy as well as being powerfully aromatic, intensely rich in flavour and full of character. All these features are so very important to an authentic Pizza Napoletana. True pizza aficionados never despise the cornicione and discard this crust but appreciate it for the richly–flavoured and texture–rich integral part of the pizza that it is.

Our wood-burning oven, Forno a Legna, is similarly 100% authentic and was designed and built for us by the descendents of Ernesto Di Fiore, whose family have been perfecting this method of cooking and their Forno a Legna for over sixty years and three Di Fiore generations. It is the careful design of our Italian- imported, low-dome Forno a Legna which enables our pizzaiolo to generate the essential dry heat temperatures of over 500°C so crucial for Pizza Napoletana which is freshly baked for you in just about 90 seconds. The ultimate fast food!

These fire and oven management skills of our pizzaiolo are further put to the test as he deftly rotates each of the pizzas in the oven to ensure a carefully controlled exposure to the flame on all sides. This will then result in the slight blackening on the cornicione and on the bottom of the pizza. The cornicione colour comes from the flame "kissing" the crown, while the bottom colour is from high oven floor temperatures and the potassium-rich wood ash all of which add a depth of flavour that can be achieved in no other way.

After such care in the preparation of the precious pizza crust you will now understand why at Nonna Marzano’s Pizzeria we go one step further in honouring the tradition of Pizza Napoletana by adding nothing to top the pizza except the very best and freshest ingredients. From our premium tomato sauce to our fresh cheeses, meats and fire-roasted vegetables all are chosen as some of the best products we can source.

At Aphrodite’s Rock Microbrewery & Brewpub’s Pizzeria you can also enjoy the best handcrafted ales, lagers and ciders in Cyprus fresh from our own craft brewery or, should you prefer, with a carafe of house wine or with an interesting selection of carefully selected local and international bottled wines from Cyprus, Italy, France, Germany and the New World and all at very reasonable prices.

Whilst we do, as mentioned, offer wines, it is however worth noting that Italians rarely drink wine with pizza but prefer to drink light and hoppy beers as the grain flavour of the beer better complements the flavour of the pizza. Please allow our experienced waiting staff to explain all the options with you.

You can choose to dine in our rustic restaurant overlooking the green rolling hills above Paphos or if you prefer you can take one of our courtyard dining tables where you eat al fresco under the stars.
